Székelykáposzta is a delicious and hearty Transylvanian dish made with sauerkraut, smoked meats, sausage, and spices. The sourness of the sauerkraut is balanced by the flavor of the smoked meats, and the spices give it a kick. Székelykáposzta is a true winter dish that warms and nourishes.
Ingredients:
2 kg sauerkraut
500 g smoked pork shank
200 g smoked sausage
200 g smoked pork shoulder
1 onion
2 cloves garlic
1 tablespoon paprika
1 tablespoon caraway seeds
salt
pepper
oil
Instructions:
Rinse the sauerkraut and squeeze out any excess water if desired.
Soak the smoked meats in water for 1-2 hours.
Chop the onion and crush the garlic.
Heat oil in a pot and fry the onion.
Add the paprika and caraway seeds and fry for another 1-2 minutes.
Add the sauerkraut, smoked meats, garlic, salt, and pepper to the pot.
Pour in water and simmer, covered, for 2-3 hours, or until the sauerkraut is soft.
Tips:
Székelykáposzta can be served with sour cream and fresh bread to taste.
You can also use fresh meat instead of smoked meats.
