Senegal: Yassa (Pork)

Description:

Yassa is a traditional Senegalese dish that is typically made with chicken, but can also be made with pork. Yassa is made with meat that is marinated in onions, garlic, lemon juice, and spices. Yassa is typically served with rice.

 

Ingredients:

    500g pork loin (cut into strips)

    2 large onions (chopped)

    4 cloves garlic (crushed)

    1/2 cup lemon juice

    1/4 cup olive oil

    1/4 cup ground coriander

    1/4 cup ground cumin

    1/4 cup ground cloves

    1/4 cup salt

    1/4 cup pepper

 

Instructions:

    In a bowl, combine the onions, garlic, lemon juice, olive oil, coriander, cumin, cloves, salt, and pepper.

    Add the pork to the marinade and mix to coat all sides.

    Marinate the pork in the refrigerator for 30 minutes to 1 hour.

    Preheat the oven to 180°C (350°F).

    Place the marinated pork in a baking dish and bake for 30-40 minutes, or until the meat is cooked through.

    Serve Yassa with rice.

 

Tips:

    You can use pork shoulder, pork belly, or ground pork instead of pork loin.

    You can adjust the spices to your taste.

    Add vegetables, such as bell peppers, zucchini, or tomatoes, to make the dish more colorful and flavorful.
