Peruvian Lomo Saltado Recipe

Lomo Saltado is a flavorful Peruvian dish made with beef, vegetables, and french fries. Here's how to make it:

 

Ingredients:

    1 pound beef (sirloin or tenderloin is best)

    2 tablespoons olive oil

    1 medium onion, thinly sliced

    1 tomato, thinly sliced

    1 red bell pepper, thinly sliced

    1/2 cup thinly sliced potatoes

    1 tablespoon soy sauce

    1 tablespoon red wine vinegar

    1 teaspoon ground coriander

    1/2 teaspoon ground cumin

    1/4 teaspoon cayenne pepper (optional)

    Salt and pepper to taste

 

Instructions:

    Slice the beef: Cut the beef into thin strips.

    Marinate the beef: Combine the soy sauce, red wine vinegar, coriander, cumin, cayenne pepper (if using), salt, and pepper. Add the beef to the marinade and let sit for 30 minutes.

    Fry the potatoes: Heat oil in a skillet. Fry the potatoes until golden brown. Remove from the skillet and set aside.

    Sear the beef: Heat olive oil in a skillet over medium heat. Add the beef and sear until browned. Remove from the skillet and set aside. 

    Sauté the vegetables: Add the onion to the skillet and cook until translucent. Add the tomato and bell pepper and cook for an additional 5 minutes.

 

    Serve: Combine the beef, vegetables, and french fries in a bowl. Toss to combine and serve.

 

Tips:

    You can add fresh chili peppers for a spicier flavor.

    Lomo saltado can also be served with rice.
