Moroccan Tagine Recipe

Ingredients:

For the meat:

    1.1 lbs lamb leg (or chicken breast)

    1 tablespoon olive oil

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1/2 teaspoon ground cumin

    1/2 teaspoon ground turmeric

    1/4 teaspoon cinnamon

 

For the vegetables:

    2 tablespoons olive oil

    1 onion, chopped

    2 cloves garlic, minced

    2 carrots, sliced

    1 red bell pepper, sliced

    1 zucchini, sliced

    1 tomato, diced

    1/4 cup green peas

    1/4 cup cilantro, chopped

 

For the spices:

    1/2 teaspoon ground ginger

    1/4 teaspoon ground cloves

    1/4 teaspoon ground nutmeg

    1 pinch saffron (optional)

    1/2 cup water

    1/4 cup honey

    1/4 cup lemon juice

 

To serve:

    Couscous

 

Instructions:

    Cut the lamb (or chicken breast) into bite-sized pieces. Toss in olive oil, salt, pepper, cumin, turmeric, and cinnamon.

    Heat olive oil in a pan. Sauté the onion and garlic until translucent.

    Add the carrots, bell pepper, zucchini, and tomato. Cook for 5 minutes.

    Add the green peas, cilantro, ginger, cloves, nutmeg, and saffron. Stir to combine.

    Pour in the water, honey, and lemon juice. Bring to a boil, then simmer for 30 minutes.

    Add the marinated meat, and cover and cook for an additional 30 minutes, until the meat is tender.

    Serve with couscous.

 

Tips:

    You can use chicken breast instead of lamb.

    You can vary the vegetables to your liking.

    You can omit the saffron.

    You can also serve with rice instead of couscous.
