Mexico: Carnitas (Shredded Pork)

Carnitas is a dish made from slow-cooked and then shredded pork that is popular in Mexico. Carnitas is typically made from pork shoulder or pork butt and is cooked with orange juice, lime juice, spices, and lard. Carnitas is often served in tortillas with guacamole, salsa, and onions.
Ingredients:
2 kg pork shoulder (bone-in and skin-on)
1 cup orange juice
1 cup lime juice
1/2 cup olive oil
1/4 cup ground cumin
1/4 cup paprika
1/4 cup garlic powder
1/4 cup onion powder
1/4 cup salt
1/4 cup pepper
1 cup lard
Instructions:
In a bowl, combine the orange juice, lime juice, olive oil, cumin, paprika, garlic powder, onion powder, salt, and pepper.
Place the pork in a baking dish and pour the marinade over it.
Cover the baking dish with foil and bake the pork at 150°C (300°F) for 4-5 hours, or until the internal temperature reaches 90°C (195°F).
Remove the pork from the oven and let it rest for 30 minutes.
Shred the pork with two forks and fry it in lard in a pan until crispy.
Serve carnitas in tortillas with guacamole, salsa, and onions.
Tips:
You can use pork butt instead of pork shoulder.
The cooking time may vary depending on the size of the pork.
Carnitas can be stored in the refrigerator for 3-4 days or frozen.
