Argentinin Locro is a hearty and flavorful one-pot dish made with corn, beans, beef, and vegetables. Here's how to make it:

Ingredients:

    2 cups dried corn

    1 cup white beans

    1 cup dried beans

    1/2 cup olive oil

    2 pounds beef stew meat

    1 medium onion, chopped

    2 cloves garlic, minced

    1 teaspoon ground cumin

    1/2 teaspoon ground paprika

    1/4 teaspoon cayenne pepper

    1 bay leaf

    1 cup tomato puree

    2 quarts water

    Salt and pepper to taste

Instructions:

Soak the corn and beans: Soak the corn and beans in water overnight.

Cook the beef: Heat the olive oil in a large pot over medium heat. Add the beef and cook until browned. Drain off any excess grease.

Sauté the vegetables: Add the onion and garlic to the pot and cook until softened.

Add the spices: Stir in the cumin, paprika, cayenne pepper, and bay leaf. Cook for 1-2 minutes, until fragrant.

Add the corn, beans, tomato puree, and water: Add the corn, beans, tomato puree, and water. Bring to a boil, then reduce heat to low, cover the pot, and simmer for 2-3 hours, or until the corn and beans are tender.

Serve: Serve the locro hot with sour cream, cheddar cheese, rice, or tortilla chips.

Tips:

Locro can also be frozen. Let it cool completely before freezing.

You can adjust the spiciness of the locro to your taste.

Enjoy!
