Argentina: Asado (Grilled Meat)

Asado is the national dish of Argentina and is a true social event where family and friends gather to grill and eat delicious meats. Asado is traditionally made from beef, but can also be made with pork. The meat is cooked over hot coals and is usually served with chorizo sausage, morcilla blood sausage, and offal. Asado is also served with chimichurri sauce, which is a spicy sauce made from fresh herbs and vinegar.
Ingredients:
1 kg pork shoulder (bone-in and skin-on)
1/2 kg chorizo sausage
1/2 kg morcilla blood sausage
1 kg beef (striploin, ribeye, etc.)
Salt
Pepper
Chimichurri sauce (optional)
Instructions:
Light a fire with charcoal.
Cut the pork and beef into large pieces.
Season the meat with salt and pepper.
Place the meat on the coals and cook for about 20-30 minutes, or until tender and crispy on the outside.
Turn the meat during cooking to ensure even cooking.
Cook the chorizo sausage and morcilla blood sausage on the coals as well.
Serve Asado with chimichurri sauce.
Tips:
You can use a grill instead of charcoal coals.
You can marinate the meat before cooking for extra flavor.
You can use other sauces instead of chimichurri sauce, such as ketchup, mustard, or mayonnaise.
Asado can also be served with salad, roasted vegetables, or rice.
